Cooking with Wine

Wine tasting can add another dimension to a meal, and cooking with wine can have a similar influence on a recipe. For those who love wine and love to cook, experimenting with the two is a natural combination. There are some key considerations when adding wine to a new recipe that will help to ensure the best results.

When deciding which wine to choose, choose something that you would enjoy drinking. It needn’t be the very best, or most expensive, choice, but keep in mind that while cooking may remove the alcohol, it won’t remove poor quality or an unpalatable taste from a poor quality wine. So-called “cooking wines” are typically salty, cheap, and contain any variety of added herbs or spices that may alter your recipe in unforeseen ways.

Wines can be used in a recipe much like any other seasoning, and this is the key to choosing wine based on flavor. Red wines can add body and a distinctive ‘dry’ taste to a dish, whereas the acidity of whites can bring a subtle tangy depth to creamy sauces. Choosing which wine to try can also be accomplished by deciding by pairing it with a recipe you would serve it with. For example, a red wine can be an excellent addition to a strong, red meat based sauce or gravy.
